Bunu Singh Khadka buys seafood at Port Stephens and sells it from Corlette, a few minutes from the water. The range reflects what that waterway does well: scampi, oysters, clams, mackerel and cuttlefish, cleaned and prepared before freezing so the box is ready to cook.
Shell work is done in house. Oysters are shucked, cuttlefish are cleaned, clams are purged and vacuum packed. That preparation is the reason a dinner can start twenty minutes after the box is opened rather than an hour later.
Lots are small and inspected before purchase, which means the range changes with the season. What does not change is the labelling: net weight after freezing, packed date, and a dry-ice pack sized for the journey.
Questions about a box, a cut or a cooking method are welcome. Write to us in English and we will answer within one business day.
